Brie Rolls + Butternut Squash Soup = Fall Goodness
Fall time means more soup nights. There is not always time to make dinner from scratch so this soup is PERFECT. It is quick, easy and tasty.

The Brie rolls are a bit more time consuming but they are soooo worth it. The FRESH bacon is the only time suck but you do not have to add the bacon. I would advice against not adding the bacon… bacon just make everything better. Plus… you can add it to the top of the soup!
BACON
If you are a planner then make some Bacon over the weekend and save a few slices for this dish. If not then make the Bacon prior to starting the soup and the rolls. I prefer to cook Bacon in the oven on low heat for a longer time. We feel Bacon should be crispy and not burnt.

Equipment
- oven
- cookie sheet
- tin foil
Ingredients
- 1 package Bacon
Instructions
- Pre Heat Oven 350
- line the baking sheet with tinfoil
- do not grease the tinfoil
- lay the bacon flat in a SINGLE layer on the baking sheet
- cook the bacon for 30 to 45 min
- start checking after 15 min and flip when needed
- if you think it is cooking too fast and think it might burn turn the oven down, this might mean you need to cook a bit longer and flip an extra time.
- when done cooking put the bacon on a paper towel to absorb the grease
- save the grease from the pan in a mason jar and use for cooking during the week.
EASY Tortellini Butternut Squash Soup
YES! These soups are very tasty. No additional seasonings were needed in this soup. Well we did sprinkle BACON on top while eating.
Tortellini Butternut Squash Soup
Equipment
- pot
Ingredients
- 3 cans YES – Butternut Squash Soup
- 1/2 package Tortellini (we used 5 cheese)
Instructions
- boil water
- cook pasta a little less than directed
- drain pasta
- dump pasta back in pot
- pour the soup over the pasta
- return pot to cooktop and keep warm while you make the rest of dinner
Boil the Tortellini… under cook them just a tad. Strain and return to the pot. Dump the soup over the Tortellini. Keep warm on the stove while you make the Brie Rolls.
Bacon Brie Rolls
These rolls paired so well with this soup. The only issue was we did not make enough! Extremely simple to make and disappear very fast.
As we were eating them we did dust them with cinnamon and sugar… this made them insanely good!
Easy Brie & Bacon Rolls drizzled in Caramel
Equipment
- oven
- cookie sheet
Ingredients
- 1 can crescent rolls
- 2 tablespoons crushed cashews
- 1/2 block brie cheese
- smidge caramel for drizzle
- 1 stripe bacon – chopped up
Instructions
- pre heat oven as directions stare on your rolls
- open can and separate the rolls
- place the brie cheese on the wider section of the roll
- dust the top of the brie with the chopped up cashews
- roll the rolls and place on the cookie sheet
- cook as directed
- pull them out of the oven and let sit for a moment
- drizzle with caramel and sprinkle with bacon
- serve and enjoy
- side note – while eating we decided to dust them with some cinnamon and sugar and this made them ridiculously amazing!
SOUP SERVING SETS
These serving dishes are the perfect size. We find the bigger the bowl the more food is consumed. So this bowl is the perfect size because it helps to not over consume the soup therefore leaving room for the goodness on the other side of the plate. The sand which side of the plate is also a very decent size, no giant sides over here!
