Summer Chicken Salad with a Spin

We have blended our classic chicken salad with the sweetness of summertime. This savory dish pairs well with the sweetness of the figs. We prefer it served on a croissant but it is also wonderful on a bed of greens.

Summer Chicken Salad

A Summertime spin on your classic chicken salad.

Ingredients

2 cups chicken – chopped
2 eggs – hard boiled – chopped
¼ cup figs – diced
⅓ cup celery – diced
⅓ cup grapes – diced
1 tablespoon pickle juice
⅓ cup mayo
1 tablespoon mustard
sprinkle pepper
sprinkle salt

Instructions

dice your chicken and all the other ingredients
combine the chicken and the mayo in a large bowl
add in the other ingredients one by one, figs last.
Enjoy on a croissant or add a scoop to your salad.

At this point they are begging for me to stop taking pictures of their dinner… haha
