When you can serve chicken salad in a pineapple… you do!!! In addition to chicken salad being super yummy the pineapple has amazing health benefits – so go for it!
Scroll down for our summer chicken salad recipe, if you do not like all the amazing flavors we have added adjust it as you see fit. If you wanna keep it super simple… grab some pre-made chicken salad from the grocer and dump it into a pineapple. Adding a touch of black pepper, grapes, nuts or cayenne pepper to grocery store chicken salad can jazz it up and make it your own. BE CREATIVE!!!!
You can also serve it in half the pineapple on a serving tray for a crowd.

Summer Chicken Salad
Ingredients
- 2 cups chicken – chopped
- 2 eggs – hard boiled – chopped
- ¼ cup figs – diced
- ⅓ cup celery – diced
- ⅓ cup grapes – diced
- 1 tablespoon pickle juice
- ⅓ cup mayo
- 1 tablespoon mustard
- sprinkle pepper
- sprinkle salt
Instructions
- dice your chicken and all the other ingredients
- combine the chicken and the mayo in a large bowl
- add in the other ingredients one by one, figs last.
- Enjoy on a croissant or add a scoop to your salad.
