
Zucchini Mexican Boats made in the Air-fryer are a super amazing alternative to taco shells and you will be surprised how great they taste. The benefits of zucchini are worth the try if you are on the fence with this veggie.
First you want to make the Mexican meat mixture. While this is cooking you can prep the zucchini and start to toast them in the air-fryer. It is a really good idea to make the meat mixture the day before so that you are just putting these together, making for an easy meal night.

Zucchini Mexican Boats make in the Air-fryer
The best way to make these is to make the meat mixture in advance, so all you have to do is assemble and toast.
Zucchini Mexican Boats in the Air-fryer
Ingredients
- 2 zucchini's or summer squashes
- 1/2 pound Mexican Meat Mix
- 1 cup Mexican Cheese – shredded
- 2 tablespoons Olive Oil
- Cilantro as needed
Instructions
- Prepare the Mexican meat mixture – see our Mexican Meat Mix
- Pre-heat the Air-Fryer 350°
- Scoop out the seeds and make the zucchini into little boats
- Drizzle the Zucchini with oil oil and if you desire sprinkle with cayenne pepper
- Place in the Air-Fryer and Toast it for about 5 to 10 minutes
- Pull the zucchini out and load the boats with the Mexican Meat and sprinkle with cheese
- Put the boats back in for an additional 10minutes.
- * you can skip the pre-toasting stage if you want and just throw the meat into the boats.
Mexican Meat Mix
Alright this is the way we make our standard Mexican meat. In the recipe above we threw it in the zucchini boats. However, we have used it in mac and cheese, taco’s, nachos and so many other dishes. If you are a meal prepper go ahead and make a shit ton of this and freeze the meat in serving sizes.
Mexican Meat Mix
Ingredients
- 1 pound ground beef
- 1 tablespoon olive oil
- 1 can black beans
- 1 can corn
- 1/2 onion diced
- 1 jar salsa
- 6 cloves garlic minced
- 1 tablespoon old bay
- 1 teaspoon black pepper
- handful cilantro
Instructions
- Skillet on medium – add in oil and heat it up – throw in the diced onions and garlic… sauté'
- throw the meat in and brown it with the old bay and pepper
- toss in the salsa, black beans (drain if you want) and drained corn
- turn the skillet to low and let the flavors marinate
- you can use this for a meal and then throw in serving size bags and freeze for quick meals.
