Not every soup needs to be 300 steps long! This Simple Steak Soup recipe is quick, simple & tasty. The Thai noodles make it just a bit different than most steak soups and the baby corn is a great way to change it up. Enjoy.

How to make Simple Steak Soup
Leeks & baby corns – we just do not use them enough ! So we made this meal around them and we were also craving Thai noodles so before we knew it we had a Steak soup. You can easily replace the steak with chicken, my family was just sick of chicken. You could also throw in some mushrooms while your at it. Personally, I am not a fungus fan so we left those out.
We had actually never tried this bread before but it was pretty amazing and there was none left!

THE STEAK SOUP “main” INGREDIENTS





Steak Soup Recipe
This can actually be prepped the night before and left to marinate in the fridge to make you morning even easier.
STEAK – cut it up to bite size pieces.


OLD BAY – This is our go to spice for meat. Generously sprinkle the meat with it and stir it around, maybe add a bit of black pepper.

VEGGIES – Let’s get to cutting! Cut up the leeks, garlic, onions, and carrots and toss them all in.


Simple Steak Soup with Thai Noodles
Equipment
- crockpot
Ingredients
- 1.25 pound Steak
- 64 oz Beef Broth
- sprinkle Old Bay – cover the meat in it
- 5 cloves Garlic – diced
- 5 small Carrots – sliced
- 1 Leek – diced
- 1/2 can Baby Corn
- 1/4 cup Onions
- 1 sprinkle Garlic Salt
- 1 sprinkle Italian Seasonings
- 2 tbsp Butter
- 1 can Pillsbury Bread
- 1 package Thai Noodles
Instructions
- OVERNIGHT – dice it all up and store in a container in the fridge otherwise you can put directly into the crock pot.
- STEAK – dice it up to bite size pieces
- Sprinkle old bay on the meat
- Dice up onions, garlic, carrots and leeks – add to the steak
- Open and drain the baby corn – put 1/2 in
- Add one container of broth / stock
- Add to crock pot if you have not already done so
- Add another container of beef broth / stock
- Cook on high for 5 hours in the crock pot
- Cook the Thai noodles separately
- Add the noodles to the bowls first – about 3/4 of a cup
- Pour the soup over the noodles
- Side note – the other 1/2 of the baby corn we added to the pickle jar in the fridge – Saoirse like to eat these as a snack.
- Side note – the left over noodles can be used for a different dish
- Side note – the left over soup can be eaten with rice
- BREAD – Follow instructions on the can
- BUTTER – melt and add garlic salt and Italian seasonings – brush on to the bread
- pop it back into the oven for a second
- Slice and serve


BABY CORN and STOCK
The baby corn is already cut so drain and throw that in and then add the cooking stock.




You will need more stock or beef broth.

The steak is raw – so about 5 hours on high should do the trick.

Thai Noodles
Cook these separate as directed. I do not add directly to the broth because I like to portion the out per bowl. I put about 3/4 of a cup in each bowl and them poured the soup over the noodles.
We were left with extra noodles to eat other ways the next day.
We were also left with extra steak soup which was eaten by Mark wth rice.



THE BREAD
This was brushed with melted butter, garlic salt and Italian seasonings. It was a bit crispy on the outside and light and airy on the inside. That little guy knows what he is doing so just follow the instructions.
