Creamy Crockpot Chicken Corn Chowder with Potatoes
Fill up the family up with this dish and make enough to reheat for an easy reheat meal. The leeks add great flavor and the bacon is perfect. You could even throw this in a pir shell and make a pot pie out of it.
This recipe does call for some fresh bacon and potatoes so make sure you have a plan for both extra’s. You can chop up all the potatoes and throw them in or you can make some potato skins with them. Saoirse loves her tater skins so we went with the tater skin option. Both need bacon so… Try making the bacon our way – the less messy way.
INGREDIENTS
Creamy Crockpot Chicken Corn Chowder with Potatoes
Ingredients
- 1 tbsp. butter
- 1/2 onion
- 6 cloves garlic
- 1 leek
- 1 potato
- 1 lbs. chicken
- 1/2 can corn
- sprinkles old bay
- sprinkles pepper
- 1 pouch Bear Creek Mix
- 1 cup heavy cream
- 8 cups water
- bacon for topping
- cheese for topping
Instructions
- BACON – this is just for a topping make this first, chop and set aside
- POTATO – you will nee to add one potato to the mix – cook this first in the microwave
- CHOP – onion, garlic and leeks
CHICKEN BASE
- Sauté the onion, garlic and leeks in butter with old bay and pepper a sprinkle of salt.
- Add the chicken and more old bay – cook about 20 minutes and then shred.
- POTATO – The potato you cooked – dice and add it
- CREAM – add a cup of cream and turn the crock pot on low while you make the potato base
POTATO BASE
- Boil the water and follow instructions on the package
COMBINE
- Once the potato base is creamy add to the chicken base
- Add the Corn
- Let it sit on low for about 10minutes
- Taste and add pepper and salt as needed
SERVE
- Dish it out and top with cheese and bacon
ADDITIONAL INFORMATION
- This can be added to a pie crust and made into a pot pie or put into crescent rolls as mini pot pies
THE CHICKEN AND VEGGIE BASE
Cut up and sauté the leeks, onion and garlic.
Season and cook the chicken – skillet setting – 20minutes
The chicken is cooking UNDER the leeks.
Shred or cut up the chicken
throw some real potatoes in, precooked centers because we also made potato skins.
