
Taco Tuesday just got a whole lot tastier with this Cilantro Lime Chicken in the crockpot! Just pop it in the crockpot with a few ingredients and come home to a tasty Mexican meal.

Cilantro Lime Chicken in the crockpot
One of the best things about this chicken is that is takes about 15 minutes to prepare, making it easy to pop it in the crockpot before you leave in the morning. I do advise that you make enough for leftovers, because you will want to eat it in different forms through the week. Maybe serve leftovers with rice and black beans or in a quesadilla.
Cilantro Lime Chicken in the crockpot
Ingredients
- 2 pounds chicken
- 1 cup chicken broth
- 2 tablespoons olive oil
- 1 tablespoon butter
- 2 limes lime juice from a fresh lime
- 6 cloves garlic – minced
- ¼ cup onion – minced
- 1 teaspoon black pepper
- 2 teaspoons old bay
- 1 cup cilantro
- 1 cup salsa
Instructions
- Turn the skillet part of the crockpot in medium or cook in the skillet first on throw in the butter / olive oil / garlic / onion (you do not have to sear the chicken first – this step can be skipped)
- sear the chicken and sprinkle the old bay and pepper on the chicken
- turn the crockpot to low
- add in the chicken broth / salsa and cilantro
- cook in slow cooker for 8 hours low or 4 hours high (we like the slow and low option)
- pull the chicken out and shred
- Serve on shells or with rice and beans
- ENJOY
Searing the chicken is not needed – but we think it helps to lock the flavors in. So we first take the butter, oil, garlic, onion, black pepper and the old bay and we sear the chicken both sides. We then dump in the cilantro, salsa and chicken broth. Turn the slow cooker to low and then cook for 8 hours. Shred and serve.
