This is a fabulous way to use those leftovers! Pour yourself some Irish coffee, toast up some Irish Soda Bread (recipes below) and start your weekend off right!
Personally, I like my eggs on the plain side. You might want to consider adding some sweet taters and some peppers.
NOTE: This recipe is for a SMALL frittata. If you are making a standard frittata in a pie plate double the recipe.
















Corned Beef Frittata – Leftover heaven
Ingredients
- ½ cup Corned Beef – chopped up
- 3 Eggs
- splash Heavy Cream
- 2 teaspoons Garlic – minced
- â…› cup Onions – chopped
- 1 tbsp butter
- ÂĽ cup Cheese – mozzarella
- 1 slice Cheese – gouda chopped
- pinch Salt
- pinch Pepper
- pinch Creole / Old Bay Spices
Additional Ingredients
- chopped peppers
- sweet potato
Instructions
- chop up the corned beef, onion and garlic – sautĂ© in a pan with the butter and seasonings – about 5 minutes
- separate bowl whisk the eggs and cream –
- heat oven 400°
- spray pan – pour in the corned beef mixture and the swirl the egg mixture in
- sprinkle with cheese
- bake for 15 to 20minutes
